I'm reffering to option to hold the B button and see your play. Cna the other person see the play also or is it only you?

I have played several versions of Madden NFL online and have never seen another players play displayed on the screen while online. I am pretty sure they can not see yours either. The only time you should be able to see the opposing players play is if you are playing 2 player on the same screen and he/she hits the button to display it. Many of the players online play a lot and are very talented, and are "training" for a chance to win a tournament or even play in the Madden Challenge. So it sometimes may seem they know your every move, and in ways they do. It is just a video game after all, and can be predictable.
